I cooked a whole bunch of chicken last night and froze the left overs and used some for tonights dinner.
Ingredients
Chicken
1 can black beans rinsed and drained
onion
1 garlic
1 c. salsa
chili powder
cilantro
1tbs cheese
1/2 c. rice
Serves 4
Directions:
1. Cook rice add chopped cilantro and salt and pepper. Rice usually takes a bit to cook.
2. Saute onion and garlic in a large skillet pan with either oil or butter. Cook until onion is transparent. Add Chicken, cook until no longer pink and then add black beans. Continue stirring. Add chopped cilantro. Mix in 1 cup of salsa and chili powder. Put tortillas in microwave for a couple seconds then put spoonful of rice, meat mixture on top. sprinkle cheese, lettuce, tomatoes on top. May add sour cream, and more salsa.
