Okay so this is super easy and I actually found this on the back of DaVinci Macaroni Pasta. I never know whether to trust those things but I tried it out and oooh is it DeliCious!
2 c. diced tomatoes
2 c. tomato paste
1 c. water
2 cloves finely chopped garlic
1/2 c. finely chopped onions
2 tsp salt
1/2 tsp sugar
1/4 c. chopped parsley
1/2 tsp pepper
1 lb of ground beef
1/2 lb pasta
4 ounces cream cheese
1 cup grated parmesan cheese
1 c. grated swiss cheese (or cheddar)
Combine tomatoes, tomatoe paste, water, garlic, onions, pepper, salt, sugar, parsley and oregano in a pot. simmer for 1 hour on medium heat. Saute ground beef until done. combing with tomatoe mixture and simmer on low heat for 15 to 20 mins. Use 9X13 pan. Layer pan with sauce. Add a layer of cooked pasta. add a tbsp of cream cheese in each corner. scatter grated parmesan cheese and swiss cheese over pan. repeat. Bake for 30 mins @ 350. Scatter any remaining cheese on top and cook for 5-10 mins.
My own way of doing this. I didn't have ground beef the times I made it so I just added more cheese and the cream cheese you can add as much or as little as you want it worked better for me to put little chunks all over. I'm sure it tastes wonderful with the beef and I even thought about when i make it next to add spinach to it. Yum.

Lasagna Roll up
- 1 (16 ounce) package uncooked lasagna noodles
- 1 pound mozzarella cheese, shredded
- 1 (15 ounce) container ricotta cheese
- 1 pound firm tofu
- 1 (10 ounce) package frozen chopped spinach - thawed, drained and squeezed dry
- 2 cups grated Parmesan cheese
- 1 (28 ounce) jar pasta sauce
Directions
- Bring a large pot of lightly salted water to a boil. Cook lasagna noodles for 5 to 8 minutes, or until just slightly underdone; drain and rinse.
- In a large mixing bowl, mix together grated cheese, ricotta cheese, tofu, frozen spinach, and 1 cup Parmesan cheese.
- Lay out a noodle. Spread a layer of the cheese mixture on the noodle, then add a thin layer of sauce. Roll the noodle up, and place seam side down in a 13x9 pan. Repeat for other noodles. Top with remaining sauce and Parmesan cheese.
- Bake in a preheated 350 degree F (175 degree C) oven for 30 min, or until hot and bubbly.

Chicken Parmesan

3 chicken breasts
1/8t pepper
1 T butter
1/2c oil ( i never use that much)
1/2 c parmesan
1t basil
2 beaten eggs
1t salt
1/8t garlic powder
3/4 c ritz crackers or bread crumbs
2 8oz tomato sauce
8 oz mozzarella
Mix ritz crackers or bread crumbs with 1/2 of parmesan cheese. Dredge chicken in egg, salt, peper. Dip in bread crumb mixture. brown chicken in oil./ In pot, mix tomato sauce, basil and garlic. Boil for 10 minutes. Take off heat. Add butter. Pour tomato sauce over chicken in 9x13 pan. Sprinkle with parmesan cheese bake 350 for 30 minutes. Uncover and top with mozzarella. cook 10 additional minutes.

Pioneer Woman's Best Lasagna
This is THE lasagna. Oh I am salivating just thinking about it. You can go here to find the recipe.

I did make some changes to it though. And they are listed below:
I used chicken because we didn't have beef or sausage
I used fresh Parmesan rather than dried (again, only because I didn't have dried)
I used oven ready lasagna noodles rather than making them ahead of time. Where it says to cook the noodles, I didn't. I just layered them "hard" where it says to layer them. I cooked the noodles according to the oven ready directions.
TIP: Line your pan with foil if you have it just to make cleanup after a breeze.
